Protein-packed yumminess

I can’t remember where I first ran across this simple little recipe. But I’ve prepared this for years now. It’s quick, simple, filling, and packed with protein. It works for breakfast, or even as a post-run meal.

Ingredients
  1. 1 Avocado
  2. Lentils
  3. Cherry Tomatoes
  4. Olive Oil
  5. Balsamic Vinegar
  6. Mrs. Dash Seasoning
Instructions
  1. Cube the avocado, slice about 10 cherry tomatoes in half, and mix with about 1/3 C of lentils. Add a teaspoon or so of olive oil, a bit more balsamic vinegar, and sprinkle liberally with the Mrs. Dash (to taste).

Laura is a single mom to two great kids, and works from home doing website & graphic design. She is also a professional classical singer & violinist, and has formed her own opera company specializing in performing lesser-known operatic works - the Lyric Opera of Los Angeles.
