Healthy Vegan Banana Bread Protein Snack Recipe for Athletes

A friend of mine recently posted a link to this awesome recipe for banana break cupcakes PACKED with protein. I made a couple of minor modifications, reflected in the recipe below. Mine didn’t turn out nearly so pretty as the picture from the original site (I’ll explain why below), but they were certainly tasty. And if you make them in a mini-cupcake pan, they’re perfect to pack in a baggie and take along as a mid-ride snack!
